Antiseptic mechanism of sodium diacetate
In its natural state, SDA slowly releases acetic acid, a small molecule organic acid. Acetic acid molecule has good compatibility with lipid-like compounds, when acetic acid passes through the cell wall (undissociated acetic acid can penetrate the cell wall of the mold tissue more effectively than ionized acetic acid), in order to interfere with the inter-cellular enzyme interactions, so that the protein in the cell is denatured, thus playing an antimicrobial effect. The use of SDA not only maintains the bactericidal properties of acetic acid, but also does not cause the feed palatability to deteriorate due to too much acidity. Therefore, SDA can prevent the stored food and beverage mold, corruption, and thus has the effect of antiseptic, preservation of freshness.
